Lavender buttercream frosting for your cupcakes

Try out this fragrant flowery lavender icing on cupcakes and cakes. I like use a plain vanilla sponge with this icing, and top the cupcakes off with a sprig of sugared lavender to decorate

Lavender buttercream frosting for your cupcakes
  • 2 tbsp single cream
  • 1 tbsp dried lavender (I just picked some lavender from my garden and left it to dry overnight)
  • 230g icing sugarconfectioners sugar
  • 20g unsalted butter
  1. Add the dried lavender leaves to the cream, and leave in the fridge overnight, This will infuse the lavender flavour into the cream
  2. If you don't have time to leave the lavender to infuse, you can warm the cream in a pan on the hob and add the lavender to the cream. Leave the cream gently simmering for a few minutes and then take the stove off the pan and leave the mixture to cool.
  3. Sieve the lavender cream mixture to remove any lavender bits
  4. In a separate bowl, add the room temperature butter and mix in the icing sugar with an electric whisker
  5. Ensure the cream mixture is cold, and pour into your icing sugar butter mix slowly
  6. Continue to whisk the icing until it is light and fluffy
